E-Ink Display

A pre selection of Display sizes with the ability to just choose them in the ESPHome GUI.

I haven't checked the recent development in this field, but last time I made an ESP E-Ink display I had some struggles finding the correct profile for my Waveshare Display (V2 or V3 with or without fast refresh etc.) And you had to consider which pins do what and if you mixed something up you could break your screen.

Pre defined Profiles and known working Hardware would help a lot.
